SHOP MIRACLE NOODLE

Rinse the
Miracle Noodle Fettuccine noodles in a colander and drain well. Fry in a pan, moving them around constantly without oil over medium heat until they have slightly dried out. Set aside.

|
Sauté 1/2 cup chopped red onion in 1 tbsp sesame oil until semi translucent then add one whole clove of crushed garlic because I’m in love with garlic... but if your feelings are lukewarm you are free to use less (or omit altogether if you have to be that way about it).

Prepare sauce by mixing in a small bowl 1 tbsp fish sauce, 1/2 tsp either Monk fruit or Stevia, 1 tbsp tamarind paste and 1 tbsp oyster sauce. Although these last two have a surprising amount of carbs in them they are essential to Pad Thai, which really must have these salty/sour/sweet/funky flavors.

Add to pan both Fettuccine and the sauce, stir to coat well.
|
|
|
Add 1 cup bean sprouts, 3 ounces precooked shrimp, and one shredded carrot. Sauté only one minute because you want sprouts to be still firm, not mushy.

|
Sprinkle cayenne pepper to taste.
|
|
|
Crush up fried pork skins by putting in a bag and smacking with a rolling pin a couple times, or, do what I do and crush them in one fist so you can briefly feel powerful. This is a no-carb substitute for the usual crushed peanuts, but provides that salty crunch to contrast with the texture of the noodles.

Serve up your Pad Thai with a lemon wedge and a half cup of the crushed fried pork skins on the side, so they can be sprinkled atop at the very last moment (even after the sprinkling of lime juice from the wedge).
