Story; The Coffee: Mario Hervas’ coffee has been such a favorite of ours that it is our third year carrying it, and it is the only Ecuadoran coffee we’ve released in the past decade. Full-bodied and sublimely perfumed, we find it as invigorating as the scent of a freshly picked rose. The Producer: Mario Hervas left rose farming for coffee, planting Typica on his high-elevation farm. Once found across the coffee world, only a handful of farmers grow this heirloom cultivar today, so we treasure the chance to taste a 100 percent Typica coffee. The Technique: Washed processing reveals delicate lemon zest notes, lending nuance to the coffee’s deep sweetness.
