(This recipe features Polish Dogs but use your choice of "Dog")
Dog Prep
- Light your Pit Barrel as you would normally
- Smoke Polish Dogs for about 15 minutes, flip
- Smoke until Polish Dogs begin to char, remove
Onions, Peppers, Jalapenos Prep
- Slice an onion, bell pepper and jalapeno and place in a bowl
- Add a shot of tequila (or 1.5oz) to the veggies
- Add a squeezed lime
- Salt and Pepper to taste
- Grill veggies in a pan or griddle (for extra flavor grill over the Pit Barrel in a cast iron pan)
Polish Dog Assembly:
Pretzel Bun:
- Butter pretzel bun and toast in a pan or on a griddle
- Lay down some veggie mix
- Add Polish Dog
- Top with Honey Sriracha bbq sauce and mustard
Lettuce Wrap:
- Place a leaf of romaine lettuce on a plate
- Add a layer of veggie mix
- Add a few spoonfuls of Sauerkraut
- Lay down Polish Dog and top with Honey Sriracha bbq sauce
